Azerbaijan has a very old wine tradition, although its continuity was interrupted during the twentieth century. Archaeological finds at sites including Kültəpə and Qarabağlar indicate that viticulture and winemaking were practised in this territory long before the modern era. Under Soviet rule, production was strongly geared towards volume. Since independence, the sector has been rebuilt with increasing attention to vineyard work, estate bottling and dry wines of higher quality.
Vineyards are found in several parts of the country. Gabala, on the foothills of the Greater Caucasus, is one of the most visible modern centres. Altitude, cool nights and mountain influence can help grapes retain freshness there. Shamakha is also shaped by elevation and continental conditions. Other areas with a role in Azerbaijani winegrowing include Tovuz, Ganja and parts of Karabakh.
Native varieties are an important part of the picture, notably the red Madrasa and the white Bayan Shirey. International grapes are also widely planted, including Merlot, Cabernet Sauvignon, Chardonnay, Viognier and Vermentino. They are used mainly for dry reds and whites, while rosé, sparkling wine and sweeter styles are also made. Wine lovers should approach Azerbaijan as a developing wine country rather than expect one fixed national style.
