Bourgogne

Burgundy lies in eastern France, stretching on a long north–south axis from Chablis through the Côte d’Or and Côte Chalonnaise to the Mâconnais. Its climate is continental: cold winters, spring frost and hail are genuine hazards, while warm summers bring the fruit to maturity. Vineyards are often planted on sheltered east- or south-east-facing slopes. Chablis is geographically detached, to the north-west of the main region, yet is part of Burgundy.

Terroir is Burgundy’s central idea. Limestone and marl predominate, but soil texture, elevation, slope and drainage can change markedly from one parcel to the next. These distinctions are particularly finely drawn in the Côte de Nuits and Côte de Beaune. A climat is a named vineyard site with its own combination of location, soil and often a long viticultural history; the Climats of Burgundy are listed as a UNESCO World Heritage site.

Pinot Noir is the principal red grape, and Chardonnay the leading white variety. Pinot Noir usually makes pale- to medium-coloured reds with cherry, raspberry, rose and earthy notes, developing forest floor and mushroom nuances with age. Chardonnay ranges from taut, citrus-led Chablis to richer, sometimes oak-aged whites from the Côte de Beaune or Mâconnais. Aligoté produces fresh, often straightforward dry whites. Gamay is important farther south in areas commonly considered separately as Beaujolais. Saint-Bris is Burgundy’s notable Sauvignon Blanc appellation.

The appellation hierarchy runs from regional wines, such as Bourgogne and Bourgogne Aligoté, through village appellations to Premier Cru and Grand Cru. Grand Cru vineyards sit at the summit and may use their vineyard name alone; Premier Cru is generally stated with a village name and climat. Gevrey-Chambertin, Chambolle-Musigny, Vosne-Romanée, Meursault, Puligny-Montrachet, Chassagne-Montrachet and Pommard show the region’s stylistic range.

Fine red Burgundy combines perfume, lively acidity and fine tannin, and can mature for many years depending on origin and vintage. The best whites bring together tension and texture, often gaining discreet hazelnut or buttery notes with development. Style and quality vary substantially by producer, climat and harvest: that precision of origin is Burgundy’s enduring fascination at table and in the cellar.
