Chablis

Chablis is the northernmost wine district of Burgundy, centered around the town of Chablis in the Yonne department. Its cool, semi-continental climate features long, fresh springs and cool summers, resulting in an extended growing season. This preserves the grapes’ acidity and crispness while exposing them to the risk of spring frosts, a constant challenge for local growers.

The soils of Chablis are renowned for Kimmeridgian and Portlandian limestone, rich in fossils. These geological foundations give Chablis wines their characteristic minerality and flinty notes often described as 'steely' or 'gunflint'. The Premier Cru and Grand Cru vineyards are planted on the finest hillsides with the best combinations of soil structure and exposure.

Chablis wines are made exclusively from the Chardonnay grape. There are four quality levels: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. The Grand Cru vineyards are grouped on a single slope just outside the town; notable Premier Crus include Montée de Tonnerre, Fourchaume, and Vaillons. Chablis wines typically present aromas of citrus, green apple, white flowers, and a distinctive flintiness. Oak use is minimal, maintaining purity and freshness.

Chablis is also known for its aging potential. While most wines are enjoyed young, top Premier and Grand Cru bottles can develop complex aromas, gaining richness and subtle honeyed notes over time.
