Saumur

Saumur occupies the central Loire Valley around the town of Saumur and the Loire River, principally in Maine-et-Loire. The river moderates the local weather: conditions are relatively mild, yet the area is sufficiently inland to experience cool nights and notable vintage variation. It sits between Atlantic and more continental influences, a balance that helps grapes retain the acidity essential to both still and sparkling wines.

The defining geological feature is tuffeau, a soft, porous, chalk-rich limestone common in the Loire. Its historic extraction created extensive cellars with naturally cool, stable conditions for bottle ageing. Limestone and clay slopes tend to give Cabernet Franc and Chenin Blanc structure and drive, while sandier sites often produce softer, more immediately approachable reds. This range of soils is central to Saumur’s stylistic diversity.

Chenin Blanc is the leading white grape, making dry Saumur Blanc with apple, pear, quince, white-flower and waxy notes, usually carried by fresh, chalky acidity. Cabernet Franc dominates the reds, sometimes supported by Cabernet Sauvignon. Red Saumur may be light and fruit-led, but on fine limestone sites it can be seriously structured, showing blackcurrant, raspberry, violet, graphite and savoury herbal notes. Saumur sparkling wines are generally based on Chenin Blanc, Chardonnay and Cabernet Franc, and undergo a second fermentation in bottle by the traditional method.

The Saumur appellation covers still white, red and rosé wines as well as sparkling wine. Saumur-Champigny is the prominent separate red appellation in villages southeast of Saumur, including Varrains, Chacé, Parnay and Turquant, and is particularly associated with Cabernet Franc. Coteaux de Saumur for sweet Chenin Blanc and Saumur Puy-Notre-Dame for red wine further express the area’s nuance. Saumur sparkling wine is typically fresh and creamy, with citrus and brioche notes. Straightforward still wines are enjoyable young; the finest Chenins and Cabernet Francs can evolve for many years, depending on producer and vintage.
