Stellenbosch lies about 50 kilometres east of Cape Town, within South Africa’s Coastal Region under the Wine of Origin system. Vineyards surround the university town of Stellenbosch and extend across the slopes of the Simonsberg, Stellenboschberg and Helderberg, among other mountain areas. The climate is Mediterranean, with dry, warm summers and cooler, wetter winters. Altitude, aspect and the moderating influence of the Atlantic Ocean and False Bay create marked local variation. Afternoon winds and cool maritime air are particularly valuable in slowing ripening and preserving acidity.

Soils are equally diverse. Weathered granite is widespread, alongside sandstone, shale and clay-rich sites. Granite-derived soils are often well drained and relatively poor, while clay can retain moisture during dry seasons. Together with altitude and exposure, these conditions explain why Stellenbosch succeeds with both structured red wines and fresh, layered whites. The district contains several wards, including Bottelary, Banghoek, Devon Valley, Polkadraai Hills and Simonsberg-Stellenbosch, each with its own mesoclimate and soil pattern.

Cabernet Sauvignon is the principal red variety and the foundation of many ageworthy reds and Bordeaux-style blends with Merlot, Cabernet Franc, Petit Verdot and sometimes Malbec. Syrah, often labelled Shiraz, ranges from peppery examples to riper, dark-fruited styles. Pinotage has an important place in Stellenbosch, from straightforward fruity wines to concentrated, oak-matured bottlings. Chenin Blanc is historically significant and may be dry, rich and barrel-aged; Sauvignon Blanc and Chardonnay commonly show citrus and stone-fruit character, while Chardonnay can gain creamy texture from barrel maturation.

Stellenbosch is a district in the Wine of Origin scheme. The system permits geographical designations at area, district and ward level, and regulates provenance claims; a stated grape variety normally requires at least 85% of that variety. Producers such as Rustenberg, Vergelegen, Simonsig, Delheim, Spier, Kleine Zalze, Ken Forrester and Vriesenhof demonstrate the district’s stylistic range. Classic Cabernet wines and blends often combine cassis, cedar, herbs and firm tannins, with leading examples developing for a decade or longer. The best Chenin Blancs and Chardonnays can also gain waxy, nutty and savoury complexity in bottle.
