Cava

Cava is Spain's iconic traditional-method sparkling wine, mainly produced in Catalonia.

347 wines from 179 wineries in our database

Cava is Spain's most renowned sparkling wine, predominantly produced in Catalonia around the town of Sant Sadurní d'Anoia near Barcelona, although the DO rules allow production in several other regions. The Mediterranean climate—with warm, dry summers and mild winters—encourages full grape ripening while preserving essential acidity for sparkling wine.

The soils in the primary Cava regions are a mix of limestone, clay, and sand, which contribute freshness and delicate aromatics to the wines. The classic blend involves Macabeo, Xarel-lo, and Parellada, but modern Cavas may also incorporate Chardonnay and Pinot Noir. Trepat and Garnacha are especially used for rosé Cavas.

Cava must be produced using the traditional method (méthode traditionnelle), which means the wine undergoes its second fermentation in bottle. Maturation categories are defined: regular Cava (at least 9 months on the lees), Reserva (15 months), and Gran Reserva (30 months or more).

Cava wines are known for their refreshing acidity, fine bubbles, and flavors of green apple, citrus, almond, and sometimes light brioche. They range from dry (Brut Nature, Brut) to slightly sweet styles and age well, especially in the Reserva and Gran Reserva categories, gaining complexity with time.
