Clairette de Languedoc is a small appellation in Hérault, in central Languedoc west of Montpellier. Its vineyards lie around Adissan, Aspiran, Cabrières, Fontès, Nizas and Paulhan. The climate is Mediterranean, with abundant sunshine, dry summers and cooling winds. Proximity to the Cévennes foothills brings local changes in elevation and cooler nights, while spring and autumn rainfall remains an important vintage influence.

Soils are varied, including limestone, clay-limestone, stony terraces and, in places, schist, notably towards Cabrières. This diversity matters for Clairette, an ancient southern French variety that can crop generously and is susceptible to oxidation. On lean, well-drained sites and at controlled yields, the grape is more likely to retain tension, structure and aromatic clarity.

The appellation is devoted exclusively to Clairette Blanche. It covers dry white wines, sweeter white styles and the traditional rancio style: wine deliberately matured with oxygen to develop nutty, savoury complexity. Clairette de Languedoc is an AOP without a cru hierarchy; its rules define, among other matters, the delimited production area, permitted grape and wine styles. Adissan is regarded as the historic heart of the appellation.

Dry examples are generally light to medium-bodied, showing lemon, white flowers, fennel and almond, sometimes with a gentle saline bitterness on the finish. Sweet wines may show honey, dried apricot and candied citrus. Rancio is distinctly mature and oxidative, recalling walnut, spice and dried fruit. Most dry wines are best enjoyed young, over the first few years, whereas sound sweet and rancio wines can evolve for considerably longer. Serve dry wines with fish, shellfish or goat’s cheese; sweet and rancio styles work well with foie gras, blue cheese and nut-based desserts.
