Pauillac

Pauillac is a red-wine appellation on the left bank of the Gironde, in the Haut-Médoc, north of Saint-Julien and south of Saint-Estèphe. Its vineyards surround the small town of Pauillac, where the broad estuary moderates the climate. Atlantic influence brings humidity and variable weather, while the Gironde can reduce frost risk and soften autumn conditions. Cabernet Sauvignon benefits from the long season here, although full ripeness remains crucial in cooler or wetter vintages.

Pauillac’s great terroirs are founded on deep, free-draining Gunzian gravel, deposited by the Garonne. These slightly raised gravel ridges retain warmth and encourage deep rooting. Conditions vary considerably by site, however: clay, sand and limestone also occur and affect water supply. Cabernet Sauvignon is particularly well suited to the warm gravel, while clay-rich parcels often give Merlot greater reliability and flesh.

The wines are nearly always blends, with Cabernet Sauvignon providing the framework and Merlot the principal complement. Cabernet Franc and Petit Verdot are regularly used in small proportions; Malbec and Carmenère are marginal. Pauillac is associated with powerful yet controlled red Bordeaux: blackcurrant and cassis, cedar, cigar box, graphite, pencil shavings and sometimes violet. Young examples may have marked tannins, but bottle age brings notes of leather, tobacco and earth.

The appellation is among Bordeaux’s most celebrated communes. It contains three of the five first growths in the 1855 Classification: Château Lafite Rothschild, Château Latour and Château Mouton Rothschild. Pauillac also has numerous classified growths, including the second growths Pichon Longueville Comtesse de Lalande and Pichon Baron. Bages, Milon and Saint-Lambert are significant local lieux-dits. Sound Pauillac usually rewards patience: more approachable bottlings can drink well after a few years, whereas the finest wines can mature for several decades.
