Sauternes

Sauternes is an appellation for sweet white wine in Graves, south of the city of Bordeaux, on the Garonne’s left bank. It covers the communes of Sauternes, Barsac, Bommes, Fargues and Preignac. Here the cooler Ciron meets the warmer Garonne. In autumn, morning mists followed by sunny, dry afternoons often create conditions favourable to Botrytis cinerea, or noble rot. This remains a precarious phenomenon: rain at the wrong point can seriously complicate a harvest.

Sémillon is usually the principal grape in the blend. It provides breadth, a waxy texture, and honeyed and dried-fruit notes. Sauvignon Blanc contributes acidity, freshness, and fragrant citrus or herbal detail, while small amounts of Muscadelle may add floral character. Noble rot causes water to evaporate from the berries, concentrating sugar, acidity and flavour compounds. Pickers commonly make several passes through a vineyard, selecting only berries or parts of bunches at the desired stage. Low yields and this labour-intensive work help explain the wines’ prices.

Soils range from gravel and sand to clay and limestone across the appellation. Barsac lies within the area and may label its wines either Barsac or Sauternes; its more calcareous ground is often associated with a tauter, fresher expression. Bordeaux’s 1855 classification separates these sweet wines into Premiers Crus and Deuxièmes Crus. Château d’Yquem alone holds the rank of Premier Cru Supérieur. Other established names include Château Suduiraut, Château Rieussec, Château Guiraud, Château de Rayne Vigneau and Château Doisy-Daëne.

Young Sauternes can evoke apricot, peach, pineapple and citrus alongside honey, saffron, ginger and candied peel. With bottle age, marmalade, dried apricot, caramel, nuts and spice commonly emerge, while ample acidity keeps sweetness in balance. Fine examples, especially from strong vintages and meticulous producers, can develop for many decades. Serve it cool rather than ice-cold, as an aperitif or with dishes whose salt, richness, spice or fruity acidity provides contrast.
