Soave

Soave is a dry white wine from Veneto, east of Verona in north-eastern Italy. Its appellation extends from the flatter land towards the hills around Soave and Monteforte d’Alpone. The climate is moderately continental: Lake Garda has a moderating influence, while cool air from the nearby hills and higher vineyard sites helps retain freshness. The most sought-after sites are generally on slopes, where drainage and exposure are more favourable than on the fertile plain.

Soils account for much of Soave’s stylistic diversity. In the historic Classico area, dark volcanic basalt soils are common and often lend wines a saline, stony character and firm energy. Limestone- and clay-rich soils occur elsewhere, usually giving a somewhat rounder fruit profile. Garganega is the leading grape, a late-ripening and subtly aromatic variety associated with lemon, white peach, apple, almond and sometimes blossom. Trebbiano di Soave may play a supporting role, while Chardonnay and Pinot Bianco appear in some blends.

Soave DOC is the broader appellation. Soave Classico DOC identifies wines from the historic hillside heartland around Soave and Monteforte d’Alpone. Soave Superiore DOCG also exists, with a Classico designation for its core zone; it is subject to stricter requirements, including those concerning yield and ripeness. Recioto di Soave DOCG is the sweet counterpart, traditionally made from dried grapes, and is distinct from the dry style for which Soave is best known.

Notable hillside localities and villages include Soave, Monteforte d’Alpone, Castelcerino and Fittà; Monte Foscarino is another name frequently seen on labels. Straightforward Soave is light, dry and best enjoyed young. More serious, often hillside-grown Garganega can be fuller and more layered, combining a waxy texture with fennel or herbal notes, almond bitterness and mineral detail. Fine examples can gain honey, dried-citrus and nutty nuances after several years in bottle, while retaining a lively core.
